Description
This 30 minute dinner is perfect for busy days when there isn't much time to cook, but you still want a delicious meal. It's full of sweet tomatoes, salty olives and capers, and garlic in olive with your favorite pasta.
Ingredients
- 8 oz. spaghetti or favorite pasta
- 1 T. extra-virgin olive oil
- 1 T. butter
- 1 1/2 pint cherry tomatoes, halved
- 3-4 cloves garlic, grated
- 1/2 c. olives, halved (mix of kalamata and castelvetrano or preferred olives)
- 2 T. whole capers
- 1 t. kosher salt
- freshly ground black pepper
- 1 T. fresh thyme
Steps
- Heat a large pot of water.
- In a large skillet over medium-high, heat oil and butter together until butter is melted and slightly sizzling. Add tomatoes and a pinch of kosher salt. Spread tomatoes out in a single layer for even cooking. Bring to a simmer; cook for 10 minutes until broken down and fragrant. Add garlic; cook 3-4 minutes until fragrant. Add olives, capers, and thyme; stir; cook for 5 minutes.
- When the water is boiling, add a generous amount of salt; add the spaghetti. Cook until al dente (about 1 minute before suggested time on package).
