Description
This classic dressing is simple to make with just 2 ingredients, plus salt and black pepper. The "formula" is 1 part balsamic vinegar to 3 parts olive oil.
Ingredients
Single Batch, for 3-4 servings
1 T. good quality balsamic vinegar
3 T. good quality extra virgin olive oil
salt and black pepper, to taste
Big Batch:
1/4 c. good quality balsamic vinegar
3/4 c. good quality olive oil
salt and black pepper, to taste

Single Batch for 3-4 servings:
Add balsamic vinegar and olive oil to a small bowl; whisk well.
Big Batch: Place ingredients in a jar; shake well. Season with salt and black pepper, to taste.
Keeps for 3 weeks on the counter, unless it's very hot where you are, then store it in the refrigerator, assuming you are using fresh olive oil. Do not keep it for more than 4 weeks- high quality olive oil tends to lose flavour beyond 4 weeks after opening the bottle.
Serve over your favorite salad.
