Enjoy the same tangy flavor of Key Lime Pie in these individual parfait cups. They're perfect summertime no-bake desserts that are easy and delicious.
Ingredients
- Crust:
- 1 1/2 c. graham cracker crumbs, from 10–12 full sheets
- 2 T. granulated sugar
- 1/3 c. unsalted butter, melted
- 1 t. key lime zest*
- Filling:
- 2 - 8 oz. packages cream cheese, at room temperature
- 1/2 c. powdered sugar
- 1/4 c. key lime juice, from about 6-8 key limes*
- 2 t. key lime zest*
- 2 c. whipped cream, store-bought or homemade
- Choice of Toppings:
- whipped cream, key lime zest, key lime slices, graham cracker crumbs
Steps
- In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and lime zest; stir until crumbs are evenly coated in butter. This should make about 1 3/4 cups.
- Evenly divide the crust mixture into the bottoms of 6 parfait cups or jars; press lightly to form a crust. Set aside.
- In a medium bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add the powdered sugar, key lime juice, and key lime zest; mix until well combined.
