No-Bake Key Lime Cheesecake Parfait Dessert Cups

Enjoy the same tangy flavor of Key Lime Pie in these individual parfait cups. They're perfect summertime no-bake desserts that are easy and delicious.

Ingredients

Crust:
1 1/2 c. graham cracker crumbs, from 10–12 full sheets
2 T. granulated sugar
1/3 c. unsalted butter, melted
1 t. key lime zest*

Filling:
2 - 8 oz. packages cream cheese, at room temperature
1/2 c. powdered sugar
1/4 c. key lime juice, from about 6-8 key limes*
2 t. key lime zest*
2 c. whipped cream, store-bought or homemade

Choice of Toppings:
whipped cream, key lime zest, key lime slices, graham cracker crumbs

In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and lime zest; stir until crumbs are evenly coated in butter. This should make about 1 3/4 cups.

Evenly divide the crust mixture into the bottoms of 6 parfait cups or jars; press lightly to form a crust. Set aside.

In a medium bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add the powdered sugar, key lime juice, and key lime zest; mix until well combined.

Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth. This should make about 4 c. of filling. Spoon the filling evenly over the crust in each cup. Cover the cups.

Refrigerate for at least 2 hours, or until set.

Garnish with whipped cream, lime zest, lime slices, and/or graham cracker crumbs, if desired.

Serve chilled.

6 servings.

* If using regular limes instead of key limes, the flavor will be slightly less tart and more mellow, but the cheesecake cups will still be delicious.
