Description
Chocolate chip cookies and potato chips? What? Yes, the combination is incredible with the sweet chocoate chips and salty potato chips. Use any potato chips, like thick, crispy, salt flavor kettle chips, plain, ruffled, or wavy.
Ingredients
1 c. unsalted butter, at room temperature
1 c. brown sugar
1 c. granulated sugar
2 large eggs
1 t. vanilla extract
2 1/2 c. all-purpose flour
1 t. baking soda
1/2 t. salt
2 c. coarsely crushed potato chips (4 oz.)
2 c. chocolate chips

In a large bowl, use a hand mixer or in the bowl of a stand mixer with the paddle attachment, cream together the butter, sugar, and brown sugar for 2-3 minutes.
Mix in the eggs and vanilla for 1 minute or until well combined.
Add in the flour, salt and baking soda until combined. Mix in the potato chips and chocolate chips.
Scoop the dough into balls using a 1 1/2" cookie scoop. Place on a parchment paper lined baking sheet 2" apart. Refrigerate for at least 1 hour.
When ready to bake, preheat the oven to 350 degrees F.
If desired, press a few more chocolate chips on the top of the dough balls to make them even prettier after baking.
Bake for about 11 minutes, or until the cookies are lightly brown around the edges.
Allow the cookies to cool on the cookie sheet for 3-4 minutes, then move to a wire rack to cool completely.

* Tip: If wanting the cookies to be perfectly round, use a large, round cookie cutter or a wide mouth mason jar ring and place it over the hot cookies. Use your hand to make quick circles on the cookie sheet, which will round out the cookies. This has to be done quickly when the cookies are hot, so do it immediately after the cookies come out of the oven.
