Raspberry Tiramisu No-Bake Dessert

Description

This no-bake dessert marries creamy mascarpone, coffee soaked ladyfinger cookies, and a tart raspberry puree that will delight family and friends. It's the perfect dessert for those hot summer days when turning on the oven is a no no.

Ingredients

Raspberry Puree:
2 c. fresh raspberries
1/4 c. granulated sugar
1 T. lemon juice

Mascarpone Cream:
1 c. heavy cream
8 oz. mascarpone cheese, softened
1/2 c. powdered sugar
1 t. vanilla extract

Assembly:
1 package ladyfinger cookies
1/2 c. brewed coffee, cooled
more fresh raspberries, for garnish
cocoa powder, for dusting

Raspberry Puree:
In a blender or food processor, combine the raspberries, granulated sugar, and lemon juice; blend until smooth. Strain through a fine-mesh sieve to remove the seeds. Set aside.

Make the Mascarpone Cream:
In a large bowl, beat the heavy cream until soft peaks form.

In another bowl, whisk together the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth.

Gently fold the whipped cream into the mascarpone mixture until well combined. Set aside.

Assembly:
Briefly dip each ladyfinger cookie into the brewed coffee. Arrange a layer of dipped cookies in the bottom of a serving dish.

Spread half of the mascarpone cream mixture over the layer of ladyfingers. Drizzle half of the raspberry puree over the mascarpone layer. Repeat the layers with the remaining ladyfingers, mascarpone cream, and raspberry puree.

Cover. Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.

Garnish with fresh raspberries and a dusting of cocoa powder.
