Description

Make your own iconic cake that has been reprinted over a dozed times in the NY Times. It's so special, it's perfect for holidays and any kind of celebration.

Ingredients

3/4 c. to 1 c. sugar
1/2 c. unsalted butter, softened
1 c. unbleached flour, sifted
1 . baking powder
pinch of salt, optional
2 eggs
24 halves pitted purple plums
sugar, lemon juice and cinnamon, for topping
whipped cream, for optional serving

Preheat oven to 350 degrees F.

Cream the sugar and butter together in a bowl. Add the flour, baking powder, salt and eggs; beat well.

Spoon the batter into a greased spring-form pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 t. cinnamon, to taste.

Bake 40 minutes to 1 hour.

Remove from oven; let cool to lukewarm and serve plain or with whipped cream, if desired.

8 servings.

*You could also refrigerate or freeze, if desired. To serve it from frozen, defrost and reheat it briefly at 300 degrees.
