Marshmallow Brownies

Description
These brownies are the fudgy-est, most chocolatey brownies ever and have the perfect balance of sweet, marshmallowy and fudgy decadence.
Ingredients
Brownie Layer:
9 T. unsalted butter
6 oz. dark chocolate, chopped small
1 c. plus 2 T. granulated sugar
1/2 t. kosher salt
3 large eggs
1 1/2 t. pure vanilla extract
1 c. all-purpose flour
1/4 c. unsweetened cocoa powder
Marshmallow Layer:
3 c. mini-marshmallows
Edible Brownie Batter Topping:
6 T. unsalted butter, melted
1/4 c. packed brown sugar
1/2 c. granulated sugar
1 t. pure vanilla extract
1/2 c. natural unsweetened cocoa powder
1 c. commercially heat treated all-purpose flour
1/4 c. milk

Preheat oven to 350 degrees F; line an 8x8" baking pan with buttered parchment paper, leaving a little overhang.
Brownie Layer:
In a medium bowl, melt together the butter and dark chocolate; stir until well combined. (The double boiler method or microwave will work to melt the chocolate.)
Add the granulated sugar and kosher salt; mix until combined.
Add the eggs and vanilla; stir until well combined.
Add the flour and cocoa powder on top of the wet ingredients; stir until just combined.
Pour the batter into the prepared baking pan, smoothing to the edges.
Bake 20-25 minutes, until a tester comes out with some moist crumbs***.
While the brownies are baking, prepare the edible brownie batter. In a medium bowl, whisk the melted unsalted butter, brown sugar, and granulated sugar until fully combined. Whisk in the vanilla.
Add the cocoa powder, heat treated flour**** ; stir with a spatula until you have a dry dough. Add the milk; stir until you have a thick brownie batter. Set aside.
When the brownies have finished the 20-25 minutes baking, remove them from the oven, but leave the oven on.
Sprinkle the mini-marshmallows over the top of the brownies. Return the pan to the oven for 4-5 minutes until the marshmallows are starting to melt and get gooey.
Remove the brownies from the oven. Place on a wire cooling rack.
Drop spoonfuls of the edible brownie batter over the top of the marshmallow layer, leaving some marshmallows showing through. Top with a little more chopped chocolate or mini-chocolate chips, if desired.
Allow the brownies to cool in the baking pan placed on a wire cooling rack.
To speed the cooling process, once the pan has cooled enough so that it can be picked up bare-handed, place the pan into the refrigerator.
Serve.
