Preheat oven to 350 degrees F. Grease and flour a 9x13" baking dish.
Prepare the cake batter as instructed on the box. Pour the batter into the dish. Bake for 23–25 minutes or until a wooden toothpick comes out clean. Let it cool completely.
Use the handle end of a wooden spoon to poke holes all over the cake, going deep, but not all the way through to the bottom.
In a bowl, whisk the pudding mix with the cold milk and sweetened condensed milk until thickened, about 2 minutes. Pour this all over the cake, letting it seep into the holes, spreading it out evenly.
Top the pudding layer with sliced bananas, saving a few for garnish.
In a large bowl, beat the heavy cream with the powdered sugar and vanilla until stiff peaks form. Spread the whipped cream over the banana layer.
Sprinkle the crushed Nilla Wafers over the top.
Serve, garnished with whole Nilla Wafers, leftover banana slices, toasted coconut, and/or white chocolate shavings.
16 servings.
Tips:
Use bananas that are ripe but not mushy so that they hold their shape better.
Chill the cake for 2+ hours before serving so that the flavors blend.
If wanting it extra cold and firm, freeze it for 30 minutes before slicing.
