Description

Everyone can enjoy their own yummy individual serving of these grilled potatoes and onions. They are great for camping, picnics or when you don't want to heat up the kitchen.

Ingredients

1 c. mayonnaise
1/4 c. shredded Parmesan cheese
3 cloves garlic, minced
1/2 t. paprika
1/4 t. crushed red pepper flakes
1/4 t. salt
1/4 t. ground black pepper
3 large baking potatoes, cut into 1/4" slices
1 large sweet onion, sliced
4 (12x12") squares aluminum foil
cooking spray

Preheat an outdoor grill on medium heat; lightly oil the grate.

Combine mayonnaise, Parmesan cheese, garlic, paprika, red pepper flakes, salt, and pepper in a large bowl. Add potatoes and onion; stir to coat.

Arrange aluminum foil squares on a work surface; coat each square with cooking spray.

Divide potato mixture equally among the foil squares; fold foil to enclose mixture; crimp edges together to form secure packets.

Cook on the preheated grill until the potatoes are tender, about 30 minutes.

Serve.
