Apple Spice Cake with Cream Cheese Buttercream Frosting

Description
This apple spice cake is astonishingly simple to prepare and is ready in under and hour. It starts with a box cake mix, eggs, vanilla extract and apple pie filling. Add an amazing buttercream frosting and you'll have a dessert that everyone will love.
Ingredients
Cake:
15 oz. box spice cake mix*
21 oz. apple pie filling
3 eggs
2 t. vanilla extract
Cream Cheese Buttercream Frosting:
1/2 c. unsalted butter, at room temperature
8 oz. pkg. cream cheese, softened
3 c. powdered sugar (add another cup if needed to thicken the buttercream)
1 t. vanilla extract or a little more for more flavor
jar caramel topping, optional for drizzling on top

Cake:
Preheat the oven to 350 degrees F. Spray a 9x13" glass baking dish with baking spray.
In a large bowl, add the dry cake mix, pie filling, eggs and vanilla; mix for about 2 minutes. The batter will be thick. (DO NOT add any of the ingredients listed on the back of the cake mix box!
Spread the batter into the prepared baking dish; smooth out evenly.
Bake for about 35 minutes. Remove cake from the oven. Allow the cake to cool completely before adding the cream cheese buttercream.
Cream Cheese Buttercream Frosting:
Mix the butter and cream cheese together in a mixing bowl with an electric mixer until smooth. Add 3 cups powdered sugar; mix well.
Check the consistency. If it feels too thin, add another cup powdered sugar. If it’s too thick, add in 1 t. milk; mix until smooth.
Spread the frosting over the cooled cake.
Serve, drizzled with caramel topping, if desired.
15 servings.
* Tip:
A yellow cake mix with 2 t. cinnamon, 1 t. nutmeg, 1 t. ginger and 1/2 t. cloves added in can be substituted for a spice cake mix.
The cake can be stored covered in the refrigerator for up to 1 week.
