Description
Cowboy bread was originally eaten by cowboys with beans or soup on ranches in Texas. It was a flat, crumbly bread. This one is a sweeter version, more like a coffee cake and is perfect for breakfast, a snack or a dessert.
Ingredients
Batter:
1/2 c. sugar
1/4 c. melted butter
3/4 c. milk
1 egg
1 2/3 c. all-purpose flour
2 t. baking powder
1 t. cinnamon
pinch salt
non-stick cooking spray
Topping:
1/4 c. melted butter
1/4 c. granulated sugar
1/4 c. brown sugar
1 t. cinnamon
butter, for serving, optional

Preheat the oven to 375 degrees F. Spray an 8×8 baking dish pan non-stick cooking spray.
In a medium bowl, whisk together the sugar, melted butter, milk, and egg until combined.
In a large bowl, mix together the flour, baking powder, cinnamon, and salt.
Add the wet ingredients to the dry ingredients; mix with a spatula until just combined. Pour into the prepared 8×8 baking dish. Set aside.
In a medium bowl, mix together the topping ingredients; pour or drop by spoonfuls over the batter, with the batter peaking through.
Bake 30 to 35 minutes or until a wooden toothpick inserted comes out clean.
Cool for 15 minutes before serving.
Serve topped with butter, if desired.
9 servings.
Store leftovers in an airtight container at room temperature for up to 3 days.
