Description
You can enjoy these delicious potatoes topped with cheese and bread crumbs. It's the perfect side dish any time of the year but especially during the holidays. Customize them with dry mustard and smoked paprika, if desired.
Ingredients
2 T. butter
1 small onion, chopped or minced (about 1/4 c.)
1 T. all-purpose flour
1/2 t. salt
1/4 t. black pepper
2 c. milk
2 c. shredded sharp Cheddar cheese (8 oz.)
6 medium potatoes, peeled and thinly sliced (6 c.)
1/4 c. dry bread crumbs
paprika, if desired

Preheat the oven to 375 degrees F. Grease 1 1/2 quart casserole dish with cooking spray.
In 2 quart saucepan, melt the butter over medium heat; cook the onion for about 2 minutes, stirring occasionally, until tender. Stir in the flour, salt and black pepper. Cook, stirring constantly, until bubbly; remove from heat.
Stir in the milk. Heat to boiling, stirring constantly; boil and stir 1 minute; remove from heat. Stir in 1 1/2 c. of the cheese until melted.
Spread out potatoes in a casserole dish. Pour the cheese sauce over potatoes. Bake uncovered 1 hour.
In a small bowl, mix the remaining 1/2 c. cheese and the bread crumbs together; sprinkle over potatoes.
Sprinkle the top with paprika.
Bake uncovered 15 to 20 minutes or until top is brown and bubbly and potatoes are tender.
Serve.
