Who would have guessed that something so decadently delicious could be low carb side dish too? If you leave out the bacon, it becomes vegetarian.
1 large head cauliflower, cut into bite size pieces, about 6 cups
8 strips of bacon, cooked crispy and crumbled, bake in oven at 400° for 20 min.
6 tbl. chopped chives
1/2 cu. mayonnaise
1/2 cu. sour cream
2 cu. Colby Jack Cheese or Cheddar
8 oz. sliced mushrooms
Preheat oven to 425°
In a large pot , boil water, cook cauliflower for 8-10 minutes, drain and cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbl. chives, 1 cu. cheese,mushrooms and cauliflower and mix well. Place in baking dish and cover with remaining 1 cu. of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. Top with remaining 3 tbl. chives. Serve.
