An all time favorite cake turned into brownies! What more could you want?
1 cu. butter, softened
2 cu. sugar
4 eggs
1½ tsp. vanilla
½ cu. cocoa
1⅓ cu. flour
½ tsp. salt
1 cu. chocolate chips
1 cu. caramel bits
Frosting:
3 egg yolks
1 cu. sugar
1 cu. evaporated milk
½ cu. butter
1 tsp. vanilla
1½ cu. fresh flaked coconut
1 cu. pecans, chopped
Brownies: Cream butter and sugar together, add eggs and blend well. Add vanilla, salt, cocoa and flour. Don’t overbeat. Pour into a greased 9X13 pan.Bake at 350 F for 20-25 minutes. Let cool.
Melt chocolate chips in microwave for 1 minute, drizzle with a spoon over brownies. Melt caramel bits in microwave for 1 minute and drizzle over chocolate.
Frosting: Combine egg yolks, sugar, milk, butter, and vanilla in a large saucepan. Cook and stir over medium heat until thickened, about 12 minutes ( Make sure to stir constantly for at least 10 min). Add coconut and pecans, then beat until thick enough to spread. Pour over top of brownies. You may want to place in the refrigerator to harden.
Drizzle more chocolate over the top and top off with a pecan.
