Cookies, meet cupcakes. Cupcakes, meet chocolate pudding. Chocolate pudding, meet Cool Whip. What a wonderful combination of flavors and textures. Chocolate lovers will absolutely love this dessert and so will everyone else!
1 pkg. regular Oreo Cookies, about 36 cookies. the WHOLE cookie, cream and all!
6 tbl. butter, melted
1-8 oz. package cream cheese, softened
1/4 cu. granulated sugar
1- 12 oz. tub Cool Whip, divided
1- 3.9 oz. pkg. chocolate instant pudding, made according to package directions with 2 cu. milk
Crush about 36 Oreos in a ziplock bag with a rolling pin to make fine crumbs.
Line cupcake tins with paper liners.
Make pudding, according to package direction and set aside.
Pour the cookie crumbs into a large bowl. Stir in 6 tbl. of melted butter ,use a fork to mix the butter into the crumbs.
Put a heaping tbl. of Oreo mixture in each cupcake liner and press crumbs into the bottom of each cup.
The cream cheese layer is next. Mix an 8 oz. package of cream cheese with a mixer until light and fluffy. Add in 2 tbl. milk, 1/4 cu. sugar, mix well. Stir in 1 heaping cu. of Cool Whip . Put a heaping tbl. of mixture on top of the Oreo layer using a spoon to spread the mixture evenly.
Now for the pudding layer: scoop 1 tbl. pudding on top of the cream cheese using a spoon to spread the pudding evenly. There will be just enough pudding if you use 1 tbl. for each cupcake. Use a spoon to spread the pudding evenly.
Place 1 tbl. Cool Whip on top of each cupcake using a spoon to spread it out.
Mini- chocolate chips, shaved chocolate, or nuts could be sprinkled on top. Put cupcakes in the freezer for at least an hour before serving.
This recipe will make 24 cupcakes.
