The salty crunch of pickles, onions and sweet tomatoes is a different twist on a salad, but a cold, refreshing one that will make you want more.
8 medium-large dill pickles
1 Vidalia onion
2 green peppers
3 tomatoes
1 cu. sugar
1 cu. vinegar
1 tsp. salt
Garnish: mint (optional)
Chop, slice or cube top four ingredients, set aside. Mix last three ingredients, then pour over vegetables. Serve cold.
