This frozen yogurt will make the most out of your peaches, even if they are not very good ones because roasting the peaches will improve their flavor. Make it on a hot summer day and enjoy the rich and fruity creaminess of this frozen yogurt. You may have
4 ripe peaches
1/4 cu. honey
1 cu. plain yogurt
1/4 - 1/2 cu. sugar, adjust according to how sweet your peaches are
1/8 tsp. fine sea salt
1/2 tsp. almond extract
Preheat oven to 425 degrees.
Split the peaches in half and remove pits. Place the peach halves, cut side up in a baking dish. Drizzle generously with honey. Roast for 15-20 minutes, until very tender. Remove from the oven and place in the blender. If there are juices in the pan, add them to the blender as well.
Blend the peaches until smooth. Add the remaining ingredients and blend until combined. Transfer to an airtight container and chill in the refrigerator until cold, preferably overnight. Once cold, pour into the ice cream machine and freeze according to manufacturer's directions. Serve immediately for soft-serve ice cream or transfer to an airtight container and freeze for a firmer frozen yogurt.
