Apricot and Nectarine Breakfast Cake

Description

Make this delicious breakfast when company comes or just for your own family. It is quick and so good. You can also make this with apples and pears if you wish.

Ingredients

1 1/2 cu. flour
1 cu. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt

2 large eggs
1/2 cu. milk or buttermilk
1 tsp. vanilla

1/2 cu., (1 stick) softened butter

1 or 2 apricots and a nectarine, chopped
1/2 cu. sugar mixed with a tsp. cinnamon, (add nuts if you want)

Pre-heat the oven to 375 degrees and grease a 9×9 baking dish.

Whisk first 4 ingredients together in a large bowl.

Beat next 3 ingredients in with a whisk until blended.

And finally beat in the softened butter.

Pour the batter into baker and sprinkle last 2 ingredients on top of the batter.

Bake for about 30-35 minutes at 375 degrees until a toothpick comes out just clean.
