1 lb. fresh strawberries, rinsed and patted dry
8 oz. cream cheese, softened
1/2 cu. powdered sugar
1 tsp. vanilla or almond extract
Graham cracker crumbs
Cut off strawberry stems. Hollowi out the center of the strawberry slightly to creaet a hole for the cheesecake. Cut off a little part of the pointy strawberry bottom, so the strawberry can stand without falling over. Place on a large platter.
In a medium bowl, with an electric mixer, beat cream cheese, sugar, and vanilla until fluffy, about 2 minutes on medium speed. Place mixture in a pastry bag and pipe into each strawberry, adding a little extra to the top. Refrigerate until thoroughly chilled.
Sprinkle graham cracker crumbs on top of each stuffed strawberry.
