Don't want to eat the boring left-over mashed potatoes? Don't waste them, turn them into a delicious new meal. With a few ingredients, you can take those left-overs and change them into breakfast, lunch or a side-dish for the next day's dinner!
2 cu. mashed potatoes
1 egg, beaten
1 tsp. salt and pepper
3 tbl. flour
1/3 cu. shredded Cheddar cheese
1 tbl. butter
Mix potatoes, egg, salt & pepper, flour and cheese.
Melt the butter on a non-stick pan. Make 1/2 inch thick patties, and place on a hot pan. Cook anywhere from 5-8 minutes per side, until golden brown and crispy.

chives onion
bacon bits
sour cream
