This pasta salad makes a great side dish for your outdoor BBQs and gatherings. If you don't want to use a mayo dressing , you can substitute it for Italian dressing or dressing of your choice.
1 cu. dry elbow macaroni, cooked, rinsed and drained
1/3 cu. diced celery
1/4 cu. minced red onion, soaked in cold water for 5 minutes- then drained
1 tbl. minced flat-leaf parsley
1/2 cu. diced vine-ripened tomatoes
1/3 cu. mayonnaise
3 tbl. sour cream
1 tbl. cider vinegar
1/2 tsp. dry mustard
1/2 tsp. granulated white sugar
1/2 tsp. sea salt
freshly ground black pepper
4 slices bacon, crisply cooked and crumbled
In a large bowl, combine macaroni, celery, onion, parsley, and tomato.
In a small bowl, prepare the dressing. Mix mayo, mustard, sugar, vinegar, sour cream and salt.
Add dressing to the pasta mixture and stir to combine. Season with freshly ground black pepper, to taste. Sprinkle crumbled bacon on top.
