Enjoy this delicious, moist cake anytime of day. It is even good for breakfast with the banana, pineapple, lime and coconut.
Cake:
2 cu. all purpose flour
1 lime
1 1/4 tsp. baking soda
1 1/4 tsp. baking powder
1/2 cu. flaked sweetened coconut
1/2 cu. chopped pecans
2 small bananas, mashed
1 cu. crushed pineapple (undrained)
2 eggs
1/8 cu. oil
1/4 cu. white sugar
1/2 cu. brown sugar, packed
Frosting:
4 oz. cream cheese, softened
2 oz. butter, softened
2 c.s powdered sugar
1 lime, zested & juiced
Preheat oven to 350 degrees. Grease a 9x9 pan. Zest the lime.
In a small bow,l combine flour, lime zest, baking soda, baking powder, coconut, pecans & a dash of salt.
In a medium bowl, whisk bananas, pineapple, eggs, white sugar, brown sugar, oil and 1 tsp. lime juice.
Combine wet and dry ingredients just until combined (don't overmix). Pour into pan, bake 25-28 minutes or until a toothpick comes out clean. Cool completely.
Frosting:
Cream together cream cheese and butter with mixer on medium-low. Add in lime zest and 1 tsp. lime juice. Mix in powdered sugar a little at a time until incorporated. Beat on medium until fluffy. Spread over cake and cut.
