Chili Cheese Corn Casserole

Description

Using fresh corn will add a sweet flavor to this casserole, but frozen corn can also be used. Add cooked beef, chicken or shrimp and you have a main dish that is so easy to make!

Ingredients

1/4 cup flour
1 tablespoon sugar
1/2 teaspoon salt
1 1/4 cups milk
3 eggs
2 cups fresh corn kernels (about 2 medium ears)
5 ounces (1 1/4 cups) shredded cheddar cheese (divided)
1/2 red bell pepper, seeded and chopped
1 can (4.5 ounces) chopped green chilies, OR 1 anaheim chili pepper, chopped
1/2 teaspoon hot pepper sauce

Preheat oven to 350 degrees. Grease an 8x8 baking dish.

In large bowl, combine flour, sugar, and salt; slowly stir in milk to dissolve flour. Stir in eggs, corn, 1 cup of the cheese, bell pepper, chilies, and hot pepper sauce.

Pour into dish. Bake for 40 to 45 minutes or until casserole is set in center. Sprinkle remaining 1/4 cup cheese over top; let stand to melt cheese.
