Blueberry Streusel Zucchini Bread

Description

If you have never made zucchini bread, you need to make this one. The zucchini keeps it moist, but you don't taste it. It is more like a cake than a bread. So you can have it for breakfast or for dessert. It is yummy!

Ingredients

3 eggs
3/4 cu. unsweetened applesauce
1/4 cu. oil
2 1/4 cu. sugar
1 1/2 tsp. vanilla extract
2 cu. grated/shredded zucchini
3 cu. flour
1 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1 tbl. cinnamon
2 cu. blueberries, fresh or frozen

Streusel:
1/4 cu. butter, cold
1/4 cu. brown sugar
1/4 cu. flour
1/4 cu. sugar
2 tsp. cinnamon

Preheat oven to 350 degrees. Grease 2 loaf pans.

Beat eggs, applesauce, oil, sugar, and vanilla extract until creamy.

Dump grated zucchini into a towel and wring out extra moisture. Add zucchini to mixer and stir until just combined. Add in flour, baking powder, baking soda, salt and cinnamon. Mix until well combined. Gently stir in blueberries.

Spread batter evenly among two loaf pans. F

Streusel:
Add streusel ingredients to a bowl and cut with a pastry cutter or two knives until small crumbs form. Sprinkle evenly over top of both loaf pans. Bake for 50 minutes or until a cake tester comes out clean.

Cool before slicing and serving.
