Stumped as to what to make for dinner? What something healthy and different? Make these vegetable stuffed peppers with rice and spices. You will be glad that you did!
Ingredients
- 1 tbl. salt plus 1 tsp., divided
- 4 large bell peppers, green, red, orange or yellow, seeds, membranes, and tops removed
- 1 tbl. olive oil
- 1/2 cu. onion, chopped
- 2 cu. brown rice, cooked
- 1 can black beans, rinsed and drained
- 3 small tomatoes, chopped
- 1 cu. corn kernels
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 3/4 cu. shredded Mexican blend cheese
- 1 can olives, chopped
- 4 fresh basil leaves, thinly sliced
- 3 cloves garlic, minced
- 1/2 tsp. black pepper
- 3/4 cu. spaghetti sauce
- 1/2 cu. water
Steps
- Preheat the oven to 350F.
- Bring a large pot of salted water (1 tbl. salt) to a boil.
- Cook bell peppers in the boiling water until slightly softened, 3 to 4 minutes. Drain.
