Bread:
1/2 cu. brown sugar
1/2 cu. sugar
1/2 cu. butter, softened
2 eggs
1 cu. mashed ripe banana
1/2 cu. plain greek yogurt
2 t. vanilla extract
1 T. instant coffee
1 1/2 cu. flour
1/2 cu. cocoa powder
1 t. baking soda
1/2 t. salt
3/4 cu. mini chocolate chips
Frosting:
1 T. water
1 t. instant coffee
1/4 cu. butter
1 cu. powdered sugar
2 T. mini chocolate chips
Preheat oven to 350 degrees. Grease a 9x5 pan.
Beat sugars and butter till creamy. Stir the instant coffee into vanilla. Add eggs, banana, yogurt, and coffee vanilla to the butter then beat again.
Sift together flour, cocoa powder, baking soda, and salt, then add to creamed mixture slowly. Don't over beat. Stir in chocolate chips gently. Spoon into pan. Bake 60 minutes. Remove from oven and let cool in pan for 15 minutes. Flip out and let cool completely.
Dissolve water and coffee together and beat into butter. Slowly add powdered sugar till creamy. Spread over top of cooled bread. Sprinkle with mini chocolate chips.
Cut into slices. Store in a tightly sealed container.
