Rocky Road Fudge will bring back memories of Christmases past. But you don't have to wait till Christmas to make it anymore. The microwave makes this much easier to do, so you can make it anytime!
1 -12 oz. bag milk chocolate chips or semi-sweet chocolate chips
1- 14 oz. can sweetened condensed milk
3 cu. mini marshmallows
1 1/2 cu. nuts, finely chopped, your choice of type
Line a 9x13" baking pan with aluminum foil. Lightly spray with non-stick cooking spray.
In a large bowl, pour in chocolate chips and sweetened condensed milk. Cook in microwave for about 60 seconds, remove and stir. Continue to microwave at 15 second intervals, stirring after each one until the chocolate chips are completely melted and smooth. Fold in marshmallows and nuts until fully incorporated.
Press fudge mixture into baking pan and place in fridge for about 60 minutes to let it set up or put it in the freezer to set up faster. When it is set, lift the foil from the pan, cut fudge into squares.
