This salad has unique textures, wonderful flavors and beautiful salad. It is so pleasing to the eye, it is like a piece of art. But don't worry, you can eat it! Everyone will beg you to make this salad in the future.
1 1/2 lb. fresh spinach, washed then torn into pieces
1/2 t. paprika
1 t. dry mustard
1 1/2 T. poppy seeds
1/2 small red onion, grated
1 c. olive oil
1 t. salt
2 T. fresh lemon juice
3/4 c. sugar
1/3 c. cider vinegar
1 can hearts of palm, drained, chopped
2 c. strawberries, washed, stemmed and sliced
1 c. chopped walnuts or nuts of your choice
Dressing:
Combine vinegar, sugar, lemon juice, and salt in a small saucepan and heat over medium heat until sugar dissolves, stirring frequently. Remove from heat then cool to room temperature.
When completely cooled, whisk in oil, onion, poppy seeds, dry mustard and paprika until combined. Set aside.
Combine spinach, hearts of palm, strawberries, and walnuts in a salad bowl. To serve, add dressing to taste and toss gently.
Serve the remaining dressing by the salad to add more to taste.
