This pie is so amazing you will need to make two to be sure that you don't run out! Is is easy to make for a last minute dessert too.
1 - 9 inch pie shell, unbaked
3/4 c. sugar
2 T. cornstarch
1 c. water
1- 3 oz. pkg.strawberry gelatin
4 c. fresh strawberries, sliced
fresh mint, optional
Preheat oven to 450 degrees.
Line pastry shell with a double thickness of heavy-duty foil. Do not prick. Bake for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.
Combine sugar, cornstarch and water in a saucepan, cook until smooth. Bring to a boil and then cook, stirring constantly for 2 minutes or until thickened. Remove from heat, stir in gelatin until dissolved. Refrigerate 15-20 minutes or until slightly cooled.
Arrange strawberries on the crust and then pour gelatin mixture over the strawberries. Refrigerate until set. Garnish with mint if desired.
