If Lemon Meringue Pie is a favorite of yours, then you will love these dessert bars. They taste just as delicious as the pie!
Crust:
1 c. flour
1/4 c.powdered sugar
1 stick butter, cubed
Filling:
6 large eggs
2 1/4 c. granulated sugar
3/4 c. lemon juice
zest of 2 medium lemons
Meringue:
3 large egg whites
3/4 c. granulated sugar
Preheat oven to 350 degrees.
In a medium bowl, mix together flour and powdered sugar to make crust. Cut in butter using 2 forks or a food processor, until mixture forms a dough. Pat it into a 9x13 pan.making a very thin crust.
Bake crust for about 10 minutes, until puffy and golden around the edges.
Filling:
Beat eggs, sugar, lemon juice, and zest on medium speed for about one and a half minutes Pour over crust. Bake for about 20 minutes or until filling is set and no longer runny on top. Remove from oven,cool, and chill bars until cold and firm.
In a metal mixing bowl set over a pot of simmering water, whisk together egg whites and sugar to make meringue. Whisk until sugar has melted and the mixture forms a syrup, about 10 minutes. Remove from stove and set bowl on the mixer. Beat on high with the whisk attachment until it forms stiff peaks.
Cut bars into square. Spoon meringue on bars and brown each with a small kitchen torch. You could also spoon meringue over bars before cutting and brown under your broiler.
