Whether you make these hand pies in the leaf shape or other shape, you and everyone who eats one will enjoy them just like an apple pie. They are much better than the packaged ones at the store or the nearest fast food restaurant.
1 box refrigerated pie crusts, softened as directed
1 egg, beaten
4 T. apple butter
2 T. cinnamon sugar
Preheat oven to 350°F. Line a cookie sheet with cooking parchment paper or foil.
Unroll pie crusts on a lightly floured surface. Use 2 1/2-inch leaf-shaped cookie cutter and cut 24 leaves or other preferred shape. Lightly brush each leaf with beaten egg.
Place 1 t. apple butter on center of 12 of the leaves. Place another leaf on top of each; gently press edges together to seal. Place on a cookie sheet; lightly brush tops with beaten egg, then sprinkle with cinnamon sugar.
Bake 10 to 15 minutes or until golden brown.
