Shrimp Fettuccine with Spinach and Parmesan

Description

Add shrimp and spinach to your fettuccine, cut down on salt, oil and butter to make a healthy version of this wonderful dish.

Ingredients

  • 8 oz. fettuccine, or pasta of choice, uncooked
  • 2 T. butter
  • 1 T. extra-virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 10 oz. medium shrimp, peeled, deveined
  • 3/8 t. salt
  • 1/4 t. black pepper, freshly ground
  • 6 oz. baby spinach, fresh
  • 1 1/4 oz. Parmesan cheese, shaved

Steps

  1. Cook pasta according to package directions, do not add salt or oil.
  2. Melt butter and oil in a large skillet over medium heat. Add garlic to pan and cook 1 minute.
  3. Remove garlic from pan and place in a small bowl. Increase the heat to medium-high. Add shrimp, salt, and pepper to pan; cook 4 minutes or until shrimp are done, stirring occasionally.
