Peanut Butter Popcorn

Description

This tasty popcorn is truly addicting. Enjoy this snack with or without the chocolate, mix it with pretzels, or peanuts. Yum!

Ingredients

10 c. of popped popcorn
2/3 c. brown sugar, packed
2/3 c. light corn syrup
2 1/2 T. butter
1/2 t. salt
1/2 c. creamy peanut butter
1 t. vanilla
chocolate, melted, optional

Preheat oven to 250 degrees. Line a jelly roll pan with parchment paper, spray with cooking spray and set aside.

Place popcorn in a very large mixing bowl.

Combine brown sugar, corn syrup, butter and salt in a medium saucepan, stirring to combine over medium heat, continuing at medium heat and bring to a boil, stirring occasionally. Cook for an additional 3 minutes, till it reaches 240 degrees.

Remove from heat, stir in peanut butter and vanilla. Once combined, pour over the popcorn and gently toss to coat all popcorn. Spread popcorn out on the prepared baking sheet.

Bake for 1 hour, stirring every 15 minutes. Remove from oven and let cool completely. Melt chocolate and drizzle over the top. Serve immediately.

Tip: mix with pretzels and peanuts and perhaps mini-chocolate chips and you have a mix of different tastes!
