These sugar snap peas are much healthier because they are baked and not sauted. They take only a few minutes to prepare from start to finish. They are full of flavor and the crispiness makes them so special!
2 T. shallots, chopped
1 T. fresh thyme or basil, chopped
1 lb. sugar snap peas
1 T. olive oil
1/4 c. Parmesan cheese, shredded- optional
Preheat oven to 400 degrees. Grease large baking dish.
Chop shallots and herbs.
Layer sugar snap peas on baking sheet and then top with shallots and herbs. Drizzle with oil.
Bake 8-10 minutes or until tender but still crisp.
Optional-Top with Parmesan cheese while still hot.
