Description

Make individual packets of chicken and artichokes in a wonderful sauce. This meal es easy, quick and makes for a no mess clean-up!

Ingredients

• 3 c. instant white rice, uncooked
• 3 c. warm water
• 6 small boneless skinless chicken breasts, 1/2 inch thick
• 1-13 3/4 oz. can artichoke hearts, drained, quartered
• 2 large tomatoes, chopped
• 1/2 c. Zesty Italian Dressing
• 1/4 c. pesto

Steps

1. Heat oven to 400°F.
2. Mix rice and water; evenly spoon onto centers of 6 large sheets of heavy-duty foil. Place chicken, artichokes and tomatoes in center of foil on rice then drizzle with combined dressing and pesto.
3. Fold up foil sides. Double fold top and both ends to seal each packet so no leaks occur, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
