1- 20 oz. pkg. frozen shredded hash browns with onions and peppers
2 large eggs, slightly beaten
4 T. flour
1 small sweet onion, finely grated
1 cup cooked sausage or ham
1 c. Mozzerella cheese, shredded
1/2 c. Parmesan cheese, grated
salt and pepper to taste
1 dozen eggs, separately scrambled (cooked)
chives, for garnish
Preheat oven to 400 degrees. Grease a 12 cup muffin pan.
Mix first 8 ingredients in a bowl, spoon mixture into 12 cups that are 1/3 full. Gently press mixture down the middle and up the sides.
Bake till golden brown for 25-30 minutes. If they puff up too much in center, scoop out a little with a teaspoon.
Spoon a few tablespoons of scrambled eggs into each and then top with chives.
