Description
Make this healthy, vegetarian dish as a side or as a light lunch. These portobello mushrooms give the dish a strong, earthy flavor that you will enjoy.
Ingredients
- 3 T. garlic herb butter
- 8 oz. Portobello mushrooms, washed, sliced and quartered
- 1/4 t. salt
- 1/4 t. pepper
- 1-9 oz. bag spinach, fresh
- 1/4 c. Parmesan cheese, grated
- shavings of fresh Parmesan cheese to garnish
Steps
- Melt butter in a large pan over medium heat. Cook mushrooms, salt and pepper for 2-3 minutes or until mushrooms are tender. Add spinach, cover and cook until wilted for 2-3 minutes.
- Reduce heat to low, simmer 3-4 minutes. Stir in Parmesan cheese. Top with shaved Parmesan cheese.
