An easy way to make your mashed potatoes ahead of time.
5 lbs. russet potatoes, peeled, quartered and cooked
8 oz sour cream
1 c. milk
salt and pepper to taste
8 1/2 oz. sun-dried tomatoes, drained and slivered
1/4 c. fresh chives, chopped
In a large bowl, mash the potatoes with the sour cream, milk, salt, and pepper. Stir in sun-dried tomatoes and chives. Spoon into greased 9x13 inch baking dish. Bake for 35 minutes for 35 minutes.
This recipe can be done ahead of time: put potato mixture into a baking dish, cover and refrigerate, then bake later in 350 degree oven for 45 minutes. Remove the cover and bake about another 15 minutes.
