1 bunch broccoli rabe -4 cu. greens, washed
1 T. olive oil
3-4 large cloves garlic, thinly sliced
1/4 cu. sun-dried tomatoes
1 T. pine nuts, toasted
pinch hot pepper flakes
sea salt to season-optional
Wash broccoli rabe, dry with paper towels.
Heat pine nuts for 1-2 minutes in dry pan over high heat. They should be barely starting to brown. Set aside.
Heat olive oil in wok or frying pan with deep sides on medium-high heat. Add garlic and saute about 30 seconds. Don't let it brown. Add broccoli rabe, saute 2 minutes, until it starts to wilt. Add sun-dried tomatoes and hot pepper flakes, saute 2-3 minutes more, until tomatoes are hot and slightly softened and broccoli raab is tender.
Arrange broccoli rabe on serving dish and sprinkle with pine nuts. Season with sea salt, if desired.
Serve hot.
