Description
This is a beautiful and healthy dish that is full of color and flavors and textures. You won't have problems getting people to eat their veggies with this dish!
Ingredients
- 1 bunch broccoli rabe -4 cu. greens, washed
- 1 T. olive oil
- 3-4 large cloves garlic, thinly sliced
- 1/4 cu. sun-dried tomatoes
- 1 T. pine nuts, toasted
- pinch hot pepper flakes
- sea salt to season-optional
Steps
- Wash broccoli rabe, dry with paper towels.
- Heat pine nuts for 1-2 minutes in dry pan over high heat. They should be barely starting to brown. Set aside.
- Heat olive oil in wok or frying pan with deep sides on medium-high heat. Add garlic and saute about 30 seconds. Don't let it brown. Add broccoli rabe, saute 2 minutes, until it starts to wilt. Add sun-dried tomatoes and hot pepper flakes, saute 2-3 minutes more, until tomatoes are hot and slightly softened and broccoli raab is tender.
