Description
Need a meal in a hurry? Then make these Chicken and Dumplings. They are quick because you use chicken that is already cooked, like left-over chicken from another meal or rotisserie chicken from the supermarket. Chicken and Dumplings- the ultimate comfort
Ingredients
- Dumplings:
- 2 c. self-rising flour
- 1/4 c. shortening
- 3/4 c. boiling water
- 4 c. chopped chicken or turkey, cooked
- 1 c. chopped celery
- 1- 10 1/2 oz. can cream of chicken soup
- 2- 10 1/2 oz. cans chicken broth
- 3 -10 1/2 cans of water
- salt, to taste
- pepper, to taste
Steps
- Place the last 5 ingredients in a soup pot and bring to a boil. Cover.
- Dumplings:
- Pour 2 cu. self-rising flour into a large bowl, cut in 1/4 cu. shortening with a pastry blender or fork, add 3/4 cu. boiling water a little at a time until you can shape the mixture into a ball. Roll out to about 1/8 inch of thickness on a floured board. Cut into squares.
