Serve these mini-pizzas as an appetizer or as a light lunch with a salad. If you prefer, you can substitute the pepperoni with precooked sausage, ground beef, or even without any meat at all!
3 flour tortillas
15 oz. can pizza sauce
1 1/2 c. mozzarella cheese, shredded
3/4 c. mini -pepperoni
Preheat oven to 400 degrees. Grease or spray a muffin pan.
Open pizza sauce can, empty sauce from the can into a bowl, rinse the can out.
Using the open end of the pizza sauce can, cut four rounds from each tortilla, making 12. Press each round into muffin tin.
Place a tablespoon of pizza sauce into the center of each little tortilla. Sprinkle cheese on top of the sauce on each tortilla. Top each pizza with mini-pepperoni.
Bake for 10-12 minutes, or until cheese is bubbly. Remove and cool before using a fork to transfer mini-pizzas from muffin tin to a serving plate.
