The lemon, scallions/green onions and feta with the sweet, roasted beets make this dish simply amazing! Who said that they don't like beets?
4 medium beets
1 T. olive oil
1 t. salt
1/4 t. pepper
4 scallions or 1/2 c. green onions, chopped
2 t. lemon juice, freshly squeezed
1/2 c. feta cheese
Preheat oven to 450 degrees.
Peel beets, cut into 1/2 inch pieces. Toss with olive oil, salt, and pepper to taste on a baking sheet.
Roast for about 35 minutes, stirring once or twice.
Transfer to a bowl and toss with 4 chopped scallions or green onions and 2 teaspoons lemon juice. Top with crumbled feta.
