Make a sweet corn blueberry salad that is healthy, but doesn't taste like it! This is a clean, light, refreshing salad packed with fresh ingredients and topped off with a wonderful honey lime dressing.
6 ears sweet corn
1 c. blueberries, fresh
1/2 c. feta cheese, crumbled
1/4 c. fresh cilantro, chopped
3-4 green onions, diced
1 jalapeno pepper, seeded and minced
2 T. lime juice, freshly squeezed
2 T. olive oil
1 T. honey
1/2 t. ground cumin
kosher salt, to taste
pepper, to taste
Bring a large covered pot of water to a boil over high heat.
Husk corn, remove silks, cut off stem at bottom, boil for 3 minutes. Remove corn from the pot, cool. When cool, cut the kernels off the cob.
In a large bowl, add corn, blueberries, feta cheese, cilantro, green onions and jalapeno pepper.
In a small bowl, whisk together lime juice, olive oil, honey, cumin, salt and pepper.
Pour dressing over corn mixture, stir to combine and keep cold until serving.
