Dressing:
1/2 c. ranch dressing
1/2 c. salsa
2 t. chipotle chiles in adobo sauce, finely chopped
Salad:
1- 9 oz. bag romaine lettuce
2 c. deli rotisserie chicken, shredded
1 c. cherry tomatoes, halved
1 medium ripe avocado, peeled, pitted, cut into 1 inch pieces
1/2 c. canned whole kernel sweet corn, drained
1- 15 oz. can black beans, drained and rinsed
1/2 c. red onion, cut into bite-sized pieces
6 taco shells, broken into large pieces
Mix dressing ingredients in a small bowl, then refrigerate while making the salad.
Divide romaine lettuce into 6 large salad bowls. Top each serving with chicken, tomatoes, avocado, red onion, black beans and corn. Drizzle with dressing. Serve with or sprinkle with broken or crushed taco shells.
