Serve this tasty salad as a main dish or as a side salad. You and your family or guests will love this zesty taco salad with rotisserie chicken, cherry tomatoes, avocado, corn, black beans and red onion on a bed of romaine lettuce dressed with a salsa ran
Ingredients
- Dressing:
- 1/2 c. ranch dressing
- 1/2 c. salsa
- 2 t. chipotle chiles in adobo sauce, finely chopped
- Salad:
- 1- 9 oz. bag romaine lettuce
- 2 c. deli rotisserie chicken, shredded
- 1 c. cherry tomatoes, halved
- 1 medium ripe avocado, peeled, pitted, cut into 1 inch pieces
- 1/2 c. canned whole kernel sweet corn, drained
- 1- 15 oz. can black beans, drained and rinsed
- 1/2 c. red onion, cut into bite-sized pieces
- 6 taco shells, broken into large pieces
Steps
- Mix dressing ingredients in a small bowl, then refrigerate while making the salad.
- Divide romaine lettuce into 6 large salad bowls. Top each serving with chicken, tomatoes, avocado, red onion, black beans and corn. Drizzle with dressing. Serve with or sprinkle with broken or crushed taco shells.
