You may think that you know how to make scrambled eggs, but do you? It is best not to add milk, cream or cottage cheese at all, and not to add salt and pepper until the end. Salt dries out the eggs, so it is best not to season too quickly.
3 large eggs
1 T. unsalted butter
salt, to taste
freshly ground pepper, to taste
Beat eggs together with a fork. Melt butter in medium non-stick skillet over low heat and add egg mixture.
Using a heat-proof flexible spatula, gently pull eggs to center of the pan. Let liquid parts run out under the perimeter of the eggs. Cook, continually moving eggs with the spatula, just until eggs are set, 1 1/2 to 3 minutes.
Season with salt and pepper; serve hot.
