Homemade Tootsie Rolls

Description

Make your own soft and chewy candy like Tootsie Rolls at home with this recipe. Make them truly your own and finish them by rolling in nuts or coconut at the very end.

2 oz. unsweetened chocolate, chopped
1/2 c. light corn syrup
2 T. softened butter
3/4 c. powdered milk
1 t. vanilla extract
2-3 c. powdered sugar

Melt chocolate in a large microwave-safe bowl or in a double boiler over simmering water.

When chocolate is melted and smooth, stir in corn syrup and butter, stirring until butter is melted. Stir in powdered milk and vanilla extract.

Add a cup of powdered sugar, stir until incorporated. When sugar is mixed in, add another cup of powdered sugar, stir to mix. Dough will start getting stiff and might be difficult to stir in more powdered sugar into the candy.

Dust work surface with powdered sugar, knead candy until smooth. If it is still very soft, knead in more powdered sugar until firm, but not dry or crumbly. 3 cups of powdered sugar might be used in all.

When the candy is smooth and a perfect firm but supple texture, break off a palm-sized piece and roll it into a long, thin rope. Use a sharp knife to cut it into small pieces, then place them on a baking sheet. Repeat until all of the Tootsie Roll dough is formed into small pieces.

Refrigerate the tray of candy until they firm up, for about 1 hour.

Store in an airtight container in the refrigerator for up to 2 weeks.Wrap individually in waxed paper or cling wrap do that they don't start to stick together. Bring to room temperature before serving.
