Bourbon Meatballs

Description

Turn boring meatballs into fabulous with this recipe. Serve as an appetizer, or how about as the meat dish with pasta?

Ingredients

  • 3/4 lb. lean ground beef
  • 3/4 lb. ground pork
  • 1/2 c. cracker crumbs
  • 1/2 c. onion, finely chopped
  • 1/2 t. salt
  • pepper, freshly ground
  • 1 egg
  • 2 T. olive oil
  • Bourbon Sauce
  • 1 c. apricot preserves
  • 1/4 c. brown sugar
  • 3 T. chili sauce
  • 1/2 c. bourbon
  • 1/2 c. barbecue sauce
  • 1/4 c. water

Steps

  1. Preheat oven to 350 degrees.
  2. Put the first 7 ingredients, in a large bowl, breaking up the meat as you go. Mix together, using your hands to gently combine everything without compacting the meat. Form into 1 inch balls.
  3. Heat the olive oil in a pan, brown the meatballs, working in batches. Transfer meatballs to a baking sheet, and bake for about 10 minutes, until cooked through.
