Turn boring meatballs into fabulous with this recipe. Serve as an appetizer, or how about as the meat dish with pasta?
3/4 lb. lean ground beef
3/4 lb. ground pork
1/2 c. cracker crumbs
1/2 c. onion, finely chopped
1/2 t. salt
pepper, freshly ground
1 egg
2 T. olive oil
Bourbon Sauce
1 c. apricot preserves
1/4 c. brown sugar
3 T. chili sauce
1/2 c. bourbon
1/2 c. barbecue sauce
1/4 c. water
Preheat oven to 350 degrees.
Put the first 7 ingredients, in a large bowl, breaking up the meat as you go. Mix together, using your hands to gently combine everything without compacting the meat. Form into 1 inch balls.
Heat the olive oil in a pan, brown the meatballs, working in batches. Transfer meatballs to a baking sheet, and bake for about 10 minutes, until cooked through.
To make the Bourbon sauce, combine all the sauce ingredients in a pan and bring to a simmer. Simmer gently for about 10 minutes until thick.
Place cooked meatballs into the sauce, and heat through until ready to serve.
Serve with a little of the sauce on top and a bowl of sauce on the side for extra dipping.
