Make your broccoli a star of the meal with this garlic and Parmesan version. Use fresh ingredients when you are able, but if you don't have fresh garlic, you can use garlic salt or powder in its place. What a great way to enjoy your veggies!
1 head broccoli, washed, cut into bite-sized pieces
2 cloves garlic, minced
4 T. extra virgin olive oil, divided
1/2 t. Kosher salt
1/2 t. coarse black pepper
1 T. lemon juice, freshly squeezed
1/4 c. fresh Parmesan cheese
Preheat oven to 425 degrees.
Place broccoli on a large rimmed baking sheet. Toss garlic in with broccoli. Drizzle 3 tablespoons olive oil over the broccoli, season with pepper and salt. Bake 20-25 minutes until broccoli is tender. Toss lemon juice, Parmesan cheese, and 1 tablespoon olive oil on broccoli, serve immediately.
