Description

Make this easy, healthy meal with just a few ingredients. It doesn't take very long to do even in a slow-cooker. Use the Asian inspired sauce over the salmon and a side dish of rice for a complete meal.

Ingredients

10 oz. salmon fillets
1- 12 to 16 oz. pkg. frozen Asian stir fry vegetable blend
salt
pepper
2 T. soy sauce
2 T. honey
2 T. lemon juice

Line a 1 1/2 quart crock-pot with a crock-pot liner for easy clean-up and empty frozen vegetables in it. Season salmon with salt and pepper to taste. Place salmon on top of the vegetables.

Mix together soy sauce, honey and lemon juice, drizzle over the salmon.

Cover and cook on Low 2 to 3 hours.

Serve with rice, if desired. Drizzle salmon and rice with the sauce from the crock-pot.
