If you want to make your whole family happy, then you have to try this Cajun Chicken Pasta. It is a delicious skillet meal that you can make in less than 30 minutes, so it will make you happy too!
3 large, boneless skinless chicken breasts, cut into 1 inch pieces
1-2 t. Cajun seasoning
12 oz. Farfalle or bow tie pasta noodles, cooked according to package's instructions
1 red bell pepper, diced
¼ c. diced white onion
fresh parsley, chopped
Sauce:
4 T. butter
¼ c. flour
1 c. whole milk, heavy cream, or half and half
1/3 cup shredded Parmesan cheese + 2 tablespoons for garnish
2-3 t. cajun seasoning, or to taste
⅓ c. diced tomatoes
salt, to taste
pepper, to taste
Sprinkle 1-2 teaspoons seasoning over chicken pieces. Spray a large pan or non-stick skillet with cooking spray, cook chicken over medium heat 5-8 minutes, stirring throughout until cooked through. Place chicken in a bowl and set aside.
In the same pan, melt butter and saute peppers and onions 2-3 minutes. Stir in flour until mixture clumps together or comes together in a ball. Slowly whisk in milk. Stir in diced tomatoes. Stir in shredded cheese. When mixture is smooth and creamy, stir in 2 teaspoons of cajun seasoning, or to taste. Add pasta and chicken, stir to coat. Continue to stir until chicken is heated through.
Serve warm and garnish with Parmesan cheese and fresh parsley.
